The Story Behind “The Bitch”
This starter has been alive since 1907 and has only lived in three households—mine included. I received the last remaining portion of her as a birthday gift from my half-brother. It belonged to his grandmother and had already been in her family for a century.
At the time, I had just finished culinary school and was working as a young chef in San Francisco. One of the books that inspired me to become a chef as a child—Kitchen Confidential by the late Anthony Bourdain—told a story about a starter named “The Bitch.” She made incredible bread. So does ours.
This starter is a piece of our family, and we’re honored to share her with you. When she arrives in your home, we encourage you to name her—make her part of your own story. She’s meant everything to us, and we know she’ll mean something to you too.

I ordered 3 chocolate and 3 regular sourdough starters. One set was for a friend whom is also just starting to make bread. We really liked how well everything was packed as it all was very well protected. I also bought a few of the recipe bundles and printed those out and put in a binder just for sourdough recipes. I would definitely recommend this company for your sourdough starters!
Great live starter! I have baked with her already and wanted to compare to my starter (still a baby, started 1/1/26). She has put out great bread and is STRONG! If you have any doubts, no need. She will take you where you are wanting to go. Happy baking peeps!!!

My first time attempting sour dough loaves and recipes . Everything was simple to make and my family loved all of it . I’ve been using the starter bought from you to also make other things . This chocolate sourdough noir recipe works very well. The result is a rich chocolate loaf with chocolate bursts throughout. It is amazing on its own, but superb with some raspberry preserves.

This is definitely a keeper recipe if you want a dessert sourdough. It still has the sourdough tang along with the taste of rich chocolate. I would suggest eating it as a dessert bread with either cream cheese, cherry preserves, peanut butter, or red wine…anything that usually pairs well with chocolate. Or maybe a chocolate bread pudding or French toast? Presentation is quite dramatic. Large, round, good crust with very moist interior.

Honestly, this was the best chocolate ANYTHING I've had in a while. I used the best cocoa and chips I could track down that day, which makes a difference no matter what. I made the beautiful dough into two smallish leaves, which worked out beautifully. I was worried at first at how relatively thin the starter was, but it performed fine. I guess I would love to see the measurements in grams for the starter to make sure I have that right. Thanks! Oh, and I've got my second chocolate batch about to go in cold proof after hubby and I finish this episode of the Great British Baking show!

I haven’t baked with it yet, but I did feed it and put it in the fridge. It is a very active starter! I wish that you would tell how many grams are in the little jar of active starter in the set and also the chocolate starter. Also, the chocolate starter maintenance guide you use cups instead of grams and it would be nice to also have the grams listed.

First recipe I tried were the English muffins and they turned out so incredibly delicious! Also the recipe was spot on, it wasn’t difficult to put together at all. My 5 year old had a blast from start to finish putting them together.

I haven’t quite mastered sourdough bread yet, but if these would’ve came out the way that she makes them they would be absolutely delicious. So looking forward to doing it just like her. My oven is old and not sitting at the temperature it should unfortunately but I’m determined to make another one again
